Welcome to Day 3 of the #RainbowChallenge!
Day 3 of the Rainbow Challenge is about adding yellow to your daily meals. Include it as much as you possibly can!
Refreshing drink with honeydew and mint!
A fresh boost!
- 150 g cubed honeydew
- 75 g coconut water or normal water
- 1 tbsp fresh mint leaves remove stems
- 1/2 tbsp honey or maple syrup
- 2 ice cubes
Step 1: throw everything in the blender
Step 2: blend till everything is smooth
Step 3: pour into a cup and drink immediately for the best result!
It's like a bread, it's like cake. It's whatever you want it to be!
- 1 cup white cornmeal mix
- 1/2 cup all-purpose flour
- 1/4 cup sugar
- 1 tsp salt
- 4 cups fresh corn kernels about 5 to 6 ears
- 2 cups plain yogurt
- 3 large eggs lightly beaten
- 1/4 cup butter melted
Preheat the oven to 180°C. While you wait for the oven to be hot, continue with the next steps!
In a large bowl, mix together the cornmeal mix and flour, and also the sugar and salt.
Make a well in center of mixture.
Stir together corn, yoghurt, eggs and butter. Then add it the result to the cornmeal mixture, while stirring just until the dry ingredients are moistened by the wet ones.
Use a spoon to transfer the corn mixture into a lightly greased rectangular baking dish.
The oven should be ready for you now! Bake your cornbread at 180°C for 40 to 45 minutes or until golden brown.
